Hot Pepper Sauce

2 quarts datil peppers, stemmed
6-10 cloves garlic, minced
1 medium onion, chopped
1 1/4 cups vinegar
1/3 cup water
2 teaspoons garlic powder
2 teaspoons onion powder
1/4 cup lemon juice
2 teaspoons salt

Combine peppers, garlic, onion, vinegar, water, salt, garlic and onion powders in heavy pot. Cover pot and simmer for 45 minutes to an hour. Place in blender or food processor, add lemon juice. Blend for 5-6 minutes. If too thick, add vinegar or Louisiana hot sauce.
